Ingredients
2 cups old-fashioned oats
1 cup all-purpose flour
1 teaspoon kosher salt
½ teaspoon baking soda
1 teaspoon ground cinnamon
¾ cup unsalted butter, room temperature
¾ cup packed brown sugar
¼ cup granulated sugar
1 large egg room temperature
2 tablespoons honey
2 teaspoons vanilla extract
1 cup raisins

Toast oats on a baking sheet in a preheated oven at 425° for about 5 min. or until golden. Let cool. Mix all dry ingredients. Using an electric mixer incorporate butter first, then egg, honey, and vanilla. Slowly add dry ingredients. Let sit at room temperature for an hour or more. Preheat oven to 350°. Cook for 12-15 minutes.
7. Molasses Cookies
Ingredients
1 ¾cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup packed brown sugar
½ cup unsalted butter, room temperature
1 large egg, room temperature
⅓ cup molasses
Instructions
Whisk together dry ingredients. Beat wet ingredients and slowly incorporate dry ones. Pat together, wrap in plastic and let chill for about 1 hour until firm.Preheat oven to 350°. Form into balls and bake for 9–12 minutes.
6. Chewy Ginger Cookies
Ingredients
2 1/4 cups all-purpose flour
2 1/2 teaspoons ground ginger
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup packed dark brown sugar
1/2 cup shortening
1/2 cup unsalted butter, room temperature
1 large egg
1/2 cup blackstrap molasses
2 teaspoons finely grated ginger
1 teaspoon vanilla extract
1/2 cup finely chopped crystallized ginger

½ cup peanuts
¼ cup unsalted melted butter
¾ cup all-purpose flour
¾ teaspoon kosher salt
½ teaspoon baking powder
¼ teaspoon baking soda
1 large egg
¾ cup granulated sugar
½ cup packed brown sugar
16-ounce jar natural peanut butter

Ingredients
½ cup unsalted butter, room temperature
¼ cup sugar
½ teaspoon salt
1 egg yolk
2 tablespoons honey
2 teaspoons vanilla
1 cup all-purpose flour
¼ cup raspberry preserves
Instructions
Mix butter, sugar and salt, then egg yolk, honey and vanilla.Once smooth, add flour. Roll out into thin dough. Spread jam equally and roll up dough tightly. Cup cylinder into2 cm thick pieces and bake at 325° for 12-15 min.

3 cups powdered sugar
¾ cup cocoa powder

2 egg whites
1 egg
4 oz. bittersweet chocolate, chopped

¾ cup granulated sugar
1 vanilla bean
1 large eggs

Combine all dry and wet ingredients together using electric mixer. Wrap dough in plastic and chill for about 2 hours or until firm. Cut into desired shape, brush with beaten egg and top with sanding sugar. Freeze for 15 minutes and bake at 350° for 10–15 minutes.
